Bake Your Own White Almond CNY Cookies

Chinese New Year is approaching, and that only means being surrounded by mounds of CNY goodies!
White Almond Cookies are presumably loved by all during this time of the year. Instead of buying them from stores, why not try baking them yourself this year? It would make a really nice gift for your family and friends. Besides, seasonal snacks are going at exorbitant prices now. I had such a blast making this little treat, and hope you enjoy this simple, tried-and-tested rendition.


White Almond Cookies
An easy-peasy all-time favourite for the Chinese New Year!

  1. 130g or ½ cup shortening
  2. 70g or ½ cup icing sugar (powdered sugar)
  3. ¼ tsp salt
  4. 80g or ½ cup corn flour/corn starch
  5. 120g or 1 cup all-purpose flour/plain flour
  6. 60g almond flakes (slightly roasted)
  7. ¼ tsp almond extract (optional)
  1. Preheat oven to 160C or 325F, lined a baking sheet with parchment paper.
  2. Beat shortening + icing sugar + salt + almond extract until smooth.
  3. Add sieved corn flour and all-purpose flour, followed by almond flakes. Stir all till it becomes a dough.
  4. Roll dough between sheets of plastic until 1cm thick. Stain cookie cutter with some flour and cut away! Proceed to arrange them on baking sheets.
  5. Bake in preheated oven at 160C or 325F for about 20 minutes. Remove and let it cool before storing them into airtight containers.
